Blackberry Preserves

  • 5 cup sugar
  • 2 lb berries
  • 4 tsp fresh lemon juice


  1. Combine berries and sugar and let set for four hours.
  2. Bring to simmer point.
  3. Add lemon juice, boil rapidly for 12 minutes or until berries are clear and syrup thick.
  4. Cover and let stand.
  5. Ladle into hot sterilized jars.
  6. Seal and process in boiling water bath for 15 minutes.
