Pasta Sauce

ingredients

  • 1 cup red wine
  • 1/2 bunch fresh basil
  • 4 tomatoes
  • 1 eggplant
  • 1 red bell pepper
  • 8 garlic cloves
  • 10 portabella mushrooms

instructions

  1. heat pan with a little oil
  2. peel eggplant
  3. dice the tomatoes, bell pepper, eggplant and mushrooms into cubes
  4. bring tomatoes and bell peppers to a low simmer
  5. add red wine
  6. simmer for about 20 minutes
  7. add eggplant and simmer another 30 minutes
  8. add mushrooms and continue simmering until it gets thick
  9. mince basil and add at during the last couple of minutes of simmering

don't forget to stir occasionally while simmering
